Your friends and family will think you docked your Formula at an Hawaiian luau when you wow them with these amazing tropical grilled dishes. So go ahead and break out the hula skirts, ukuleles and umbrella drinks as you savor the sunset, dockside on your Formula. The tantalizing aroma wafting from your grill will be sure to entice extra guests for dinner!
Ginger Lime Sesame Pork

The ginger lime marinade is sweetened with honey and balanced with soy sauce to create the perfect blend of sweet, salty and spicy for a pork tenderloin. This marinade is equally tasty with chicken tenders. They can easily be grilled at home and stowed in your cooler or refrigerator for easy snacking all day long--nutritious and delicious!

Ingredients:

1/2 cup - Roughly chopped fresh ginger root, peeled
2 each - Large garlic cloves, peeled
1/4 cup - Fresh-squeezed lime juice
1/2 cup - Low sodium soy sauce
1/2 cup - Honey
1/4 cup - Sesame seeds, toasted
2 to 2-1/2 pounds - Pork tenderloin

Directions:

Look for toasted sesame seeds in the Oriental food section of your grocery store, or "toast" over low heat in a heavy skillet on the stove. Stir often and watch carefully.

Puree all ingredients except pork and sesame seeds in blender. Strain the marinade to remove any fibrous pieces of ginger, pressing firmly to extract all the juice. Stir sesame seeds into marinade. Place pork in non-metallic pan and cover with marinade. (Do this in the morning before you go boating or the night before. Keep refrigerated.)

Grill the pork tenderloin over medium heat until internal temperature registers 160° F (If you wish to baste while grilling, boil leftover marinade
before basting meat). Cover with foil and let rest approximately 10 minutes to allow the juices to redistribute before slicing.

Grilled Pineapple Shortcake

This dessert looks both elegant and exotic---and so easy to make! It's a natural to whip up while the grill is still hot. If you have a freezer on your Formula, a scoop of vanilla or coconut ice cream is the perfect complement

Ingredients:

2 tablespoons - Butter melted
1/2 cup - Brown sugar
1/2 teaspoon - Cinnamon
1 tablespoon - Lemon juice
1 each - Fresh pineapple peeled, cored and sliced 1/2" thick
1 each - Pound cake

1 pint - Fresh strawberries, sliced

* Whipped cream or ice cream

Directions:

Combine the butter, sugar,cinnamon and lemon juice. Spread glaze on both sides of pineapple slices. Scrape grill clean of any leftover meat bits. Place pineapple on grill and cook over medium heat for 5-10 minutes, turning once, until sugar mixture melts and pineapple is heated and tender.

Meanwhile, slice the pound cake and place on dessert plates. Top with grilled pineapple and sliced strawberries (or other seasonal fruit). Garnish with whipped cream or ice cream right before serving.
